Culinary Traditions of Tuscany and Umbria is a study abroad course focusing on the intriguing food culture of these regions. The Department of Hospitality and Tourism Management at Indiana University – Purdue University Fort Wayne (IPFW) began offering this opportunity in 2011 after extensive review of the needs of the students entering a global professional market upon graduation, as well as the mutual benefits of including non-student members of the community in such an endeavor. Focus of the program is on unique experiences off the beaten track, visiting local farms and small villages with hands-on activities exploring artisan methods of producing foods and wine. The experience is to provide participants the opportunity to interact with and learn from Italians in settings away from typical tourist locales, to facilitate a deeper understanding of the culture and cuisine. Key to the ongoing success of this program is a collaborative affiliation with the owners/operators of an Italian tour company located in eastern Tuscany. The scope and depth of the experiences afforded the participants has been enriched by the mutually beneficial relationship established with these Italians. This presentation will summarize the development and sustainment of this successful partnership. There will be a practical discussion of process and outcomes. Qualitative data on the impact on participants in the program will be presented.
